As the snow on the farmland melts away, wheat stalks gradually emerge. Tractors begin criss-crossing the hills for farming. The forest turns into a green paradise covered with beautiful fresh shoots and Japanese magnolia and cherry trees bloom. After the cherry blossoms fall, the leaves of the trees turn red, a phenomenon which Biei locals call "spring crimson foliage."
Under the clear blue sky, you can see the outlines of the mountains, still covered with lingering snow.
In Spring, asparagus, edible wild plants and overwintering vegetables are in season. Overwintering vegetables are local products left to grow under the snow during winter, sweetening them up and drawing out their goodness.
